Gomen is a much-loved Ethiopian vegetable dish made by slow-cooking leafy greens until tender and flavourful. At Enat Restaurant we simmer ours with onion, garlic, ginger and gentle spices in the alicha style, letting the natural taste of the greens shine while niter kibbeh-style seasoning adds subtle richness.
